Mr. Soukup has been working in and running kitchens for 35 years. He has worked in California, Midwest, Denver, and Dolores, Colorado. He graduated from a Culinary school in San Francisco in 1991 and worked in cafes, resorts, hotels, catering, and two different school districts. He states, “Working with children has been the most rewarding and challenging job of my career.  Adults are easily impressed. Children… not so much.”

Meals at the school are analyzed and prepared according to nutrition guidelines set forth by the USDA and CDE. This is what is required but try explaining that to a kid who just wants a piece of pizza every day and nothing else!  He endeavors to keep food interesting, fresh, and kid-friendly even though many of his customers are adults.
